  1. Lo primero que haremos será poner las lentejas en remojo con agua. No hace falta mucho rato, lo justo mientras hacemos el sofrito de las lentejas.
  2. En una olla con 2 cucharadas de aceite, pondremos a rehogar las verduras. Es decir, cortaremos la cebolla, la zanahoria, el calabacín, el pimiento rojo y verde, los ajos y por último pondremos la hojita de laurel. Salaremos y a fuego lento, dejaremos que las verduras saquen su agua y se vayan cociendo. Iremos removiendo para que la verdura no se pegue a la olla.
  3. Una vez que casi ya estén pochadas, añadiremos el tomate. Seguiremos rehogando. Pasados unos minutos, apartaremos la hoja de laurel, la reservaremos, y añadiremos un vaso de agua. Trituramos todo. No hace falta que se triture mucho, si se deja algún trocito mejor.
  4. Una vez hecho esto pasamos a la segunda parte. Escurrimos las lentejas y las introducimos en la olla, junto con la hoja de laurel nuevamente. Añadiremos también las patatas cortadas a cuadros. Rehogaremos sobre 3 o 4 minutos en la mezcla que hemos triturado. Pasado ese tiempo pondremos las espinacas los chorizos que previamente hemos cortado en mitades y añadiremos el litro de caldo de pollo.
  5. Dejaremos cocer a fuego medio. Blanquearemos el caldo. Es decir todas las impurezas que aparezcan las iremos quitando.
  6. Si al cocer nos falta líquido, no pasa nada por echarle más agua.
  7. Dejaremos cocer aprox 25 a 35 minutos. Las lentejas y las patatas tienen que estar tiernas. Rectificaremos, de sal y pimienta y añadiremos esta vez, el ajo y perejil seco.
