  2. 2 rebanadas pan seco (solo la molla)
  3. 100 CC leche
  4. 1 diente ajo
  5. Perejil

  8. Para la salsa
  9. 8 gambas rojas
  10. 1 cebolla
  11. 1 cucharadita harina
  12. 1 tomate maduro
  13. 1 vaso vino blanco
  14. 300 ml fumet de pescado

Steps to make to make Albóndigas de Rape

  1. Quitamos la espina del rape y lo picamos en la picadora, le añadimos sal y pimienta y lo mezclamos con el pan remojado con leche, el ajo, el perejil picado y el huevo ligeramente batido.
  2. De ésta masa se hacen las albóndigas, se enharinan, se fríen en una sartén y se reservan en una cazuela.
  3. En el aceite que ha quedado se saltean las gambas peladas y se reservan en la cazuela con las albóndigas.
  4. Después se sofríe la cebolla picada, las cabezas y las patas de las gambas, el vino (que dejaremos evaporar), la harina y el tomate rallado. Lo removemos unos minutos, añadimos el fumet de pescado y lo dejamos cocer durante 10 minutos
  5. Pasamos la salsa por el colador chino y lo echamos encima de las albóndigas y lo dejamos cocer unos minutos más. Lo servimos en un platillo o bol pequeño con una tostadita de pan.
