  2. 2 zanahorias medianas
  3. 3-4 champiñones no muy grandes
  4. 1 diente ajo
  5. Perejil fresco
  6. 1 huevo

  9. 1 cucharada salsa de soja
  10. 2 cucharaditas pimentón dulce
  11. 2 vasos caldo de verduras
  12. 1/2 vaso vino blanco

  16. Aceite de Oliva Virgen Extra

  1. Poner el tofu en papel absorbente unos 30 minutos para que pierda todo el líquido
  2. Pelar y picar las zanahorias, los champiñones y el diente de ajo
  3. Limpiar el perejil dejando sólo las hojas. Poner en un procesador todo junto y procesar
  4. Picar el tofu, añadir al procesador y mezclar bien
  5. Poner en un bol. Añadir el huevo, pan rallado, sal, pimienta negra recién molida, queso rallado y 1 cucharadita de pimentón dulce
  6. Mezclar todo muy bien. Meter en nevera y dejar unos 30 minutos para que coja cuerpo la masa
  7. Pasado este tiempo ponemos un plato con harina, vamos cogiendo de la masa, damos forma y pasamos por harina
  8. Una vez que las tenemos todas ponemos una sartén con Aceite de Oliva Virgen Extra a fuego medio-alto y las freímos. Pasamos a un plato con papel absorbente y reservamos. Reservamos el aceite de freír las albóndigas
  9. En una cazuela amplia ponemos el caldo de verduras y el vino blanco a fuego medio
  10. En el aceite de freír las albóndigas tostamos 1 cucharada de harina, le añadimos 1 cucharadita de pimentón dulce y parte del caldo de verduras
  11. Rehogamos y añadimos a la cazuela con el resto del caldo de verduras añadimos también las albóndigas. Dejamos 2 minutos para que espese la salsa y retiramos del fuego
  12. Emplatamos y servimos caliente acompañado al gusto. Yo le he puesto patatas en espiral al horno
