  1. Mezclar todos los ingredientes de preparacion de las albondigas. Picar bien el ajo y el perejil para añadirlo.
  2. La mezcla se prepara en bolas,(no muy grandes para que se cocine bien la carne) y poner a freir a fuego medio-alto hasta dorar todas las albondigas. Se retiran y reservan en un plato.
  3. En el aceite que sobra de freir las albondigas se echa un poco de aceite nuevo y se echan las verduras picadas. Se las echa sal al gusto y se dejan pochar a fuego medio.
  4. Una vez que la verdura esta pochada se echa lo que hemos reservado en el plato y se tiene refriendo lo maximo posible a fuego medio sin que se queme nada. Se echa media cucharada sopera de harina para que despues espese la salsa un poco.
  5. En un almirez se machaca el medio ajo restante con perejil al gusto, cuando este bien machacado se echa agua en el almirez para disolverlo y se echa a la cazuela
  6. Se vierte agua hasta cubir las albondigas y se deja a fuego medio-alto cociendo por lo menos 1 hora, hasta que lasalbondigas se ablanden.
